Michelin Guide PH 2027 selection kept all nine starred restaurants and added FLOW, which leaves open how much a guide can say about quality before it has demoted anyone.
A rating only tells you something if it can be taken away. That is the quiet test hanging over the Michelin Guide Manila 2027 selection, announced on October 29 at the Manila Marriott Hotel at Newport World Resorts. Nobody lost a star. Helm in Makati kept its two, the eight restaurants holding one star each kept theirs, and FLOW, also in Makati, joined them with its first.
The Philippines now counts 10 starred restaurants. That is a good result for the restaurants and a thin one for readers, because a second edition cannot yet show how hard a star is to keep.

Michelin Guide PH 2027 Adds 19 Establishments to Last Year’s List
The Michelin Guide PH 2027 list, formally the MICHELIN Guide Manila and Environs & Cebu 2027, recognizes 127 establishments. They break down into one two-star restaurant, nine one-star restaurants, 31 Bib Gourmand picks and 86 Selected restaurants. The inaugural list had 108, with 25 Bib Gourmands and 74 Selected. Most of the growth sits below the stars, where Selected added 12, Bib Gourmand added six and the starred tier added one.
Full Star Retention Is Consistency, Not Proof of Rigor
Michelin describes the result as an encouraging level of consistency from its established restaurants, and that reading is fair as far as it goes. What the stars cannot show is what failing looks like. The top tier has had one year to hold steady, and nobody has slipped.
Below the stars, the numbers move more. Michelin counts 10 new Bib Gourmand restaurants, eight new to the guide and two promoted from the Selected tier. Last year’s Bib list had 25 restaurants and this year’s has 31, but 25 plus 10 would be 35. Michelin’s own counts imply that four of last year’s Bib Gourmand picks are no longer on the list, and its highlights announcement does not name them.
That makes the Bib Gourmand tier the part of the Michelin Guide Manila 2027 selection where the guide has shown it will revise its own picks. The stars have not been through that test.
Bib Gourmand Is Where the Guide Reaches Beyond Makati
Seven of the 10 starred restaurants are in Makati. Gallery by Chele is in Taguig, Linamnam in Parañaque and Asador Alfonso in Cavite, and no starred restaurant is in Cebu. Michelin’s 2026 listing marked Helm, the only two-star restaurant, with four peso signs.
The new Bib Gourmands spread out. Of the 10, only C.H.E. Bacolod Chicken House Express is in Makati. Three are in Cebu, two in Pampanga, two in Cavite, and one each in Manila and Las Piñas. Michelin defines the category as good-quality cooking at moderate prices, so Tatang’s Lechon in Cebu and Tito Boy in Pampanga now sit in the same guide as Helm.
Newcomers Took Three of the Four Special Awards
Four Special Awards came with the Michelin Guide PH 2027 results, including the first Opening of the Year award in the Philippines. It went to Tadhanà in Makati, where chef Frances Tariga cooks a personal take on Filipino food. The Young Chef Award went to Francis Lacson of Digámo in Marikina, a former seafarer, and the Service Award to restaurant manager Clyde Joshua Zafra of Tito Boy in Pampanga. Ron Job Sanchez of Automat in Makati took the Exceptional Cocktails Award.
Tadhanà , Digámo and Tito Boy all entered the guide this year, and none of them holds a star. Automat was already listed in 2026.
Filipino Cooking Leads the New Entries
Michelin says Filipino cuisine accounts for nearly 60% of newly selected restaurants, and that its Inspectors saw chefs drawing more confidently on regional recipes. At the top, FLOW under chef Kevin Jonathan Uy explores links between Philippine and Peruvian cooking, while Helm blends British, Filipino and Spanish influences.
Until an edition takes a star away, a star in the Michelin Guide Manila 2027 selection tells you where to book. It cannot yet tell you where the bar sits.
